Bacon. Rosemary scrambled eggs. Kale!

Fun fact: Eggs do not photograph well next to kale. But they taste fantastic together!

EVEN-MORE-FUN FACT: Yesterday, Aaron got a second opinion on his mountain-biking injuries and they are not as bad as the doctors in Chelan thought! The clavicle fracture and ligament tear are minor and should heal just fine without surgery. He’ll be back on his bike in two weeks!! 

Today I will go to my first physical therapy session and emerge magically healed and ready to run make more progress with my ankle. While I didn’t have any pain on my walk yesterday, the ankle swelled up big time afterward. I don’t know if that’s a sign that I overdid it or if swelling is just a thing that’ll happen for a while. Hey, there’s a thing to ask the PT!

Dinner: Warm kale salad with sauteed onion, a whole zucchini and… yes… bacon.

Earlier today I had my first encounter with uncured applewood-smoked bacon from Trader Joe’s and I couldn’t not have some more. It’s that good.

Kale is great because, like spinach, you can throw a ton of it into a pan and sauté it until it shrinks down to practically nothing. Bonus yumminess if you sauté it in a bit of bacon grease. : )

Just add bacon

I’ve gotten a bit burned out on salads, but I had some lettuce that was just begging to be eaten. Of course, the answer to my problem was bacon.

Isn’t it always?

I fried up three strips of deliciousness, chopped ‘em and threw ’em right on my giant salad of Romaine, tomato, grated carrot, walnuts and olive oil. So good!

My goal was to slowly walk a mile around my neighborhood, and I done did it!!!

I never thought I’d be so excited about completing one mile, let alone one mile at a 22-minute/mile pace, but I’m absolutely thrilled to be able to get around on my own two feet again.

Here I am, starting all over. We all start somewhere.

Just taking it one step at a time.

Does eggplant egg-in-a-hole ever get old? I hope not.

I’m currently enjoying these with a little sea salt — heaven.

Did you know that eggplant is actually a fruit and is botanically classified as a berry? Here I was this whole time thinking it was a veggie. File under: Things I Wouldn’t Have Known If It Weren’t For Those Signs At Trader Joe’s.

I was up bright and early this morning to go with my mom to the dentist, then drive her to work (I need to have her car during the day to go to my various appointments). I ate last night’s leftover steak and a Larabar to tide me over for the two hours it would take for me to get back home.

It’s actually a sunny, cloudless day in Seattle — something we haven’t enjoyed for more than two weeks! I plan to get outside for a (slow, careful) walk in the neighborhood and some hammock time.

Yes, I am an adult on summer vacation. Feel free to hate me.

Dinner with Aaron means STEAK!

I’ve never cooked steak for myself, but I will most certainly eat it if it’s cooked for me. Luckily, Aaron seems to have a freezer full of it.

On the side, we had roasted baby carrots with rosemary. Oh, and we watched Casper while we ate! Was 1995 really that long ago? I still love that movie.

I know I just posted that I don’t crave ice cream (among other things) anymore, but we had a bit of it tonight since we found coconut-milk ice cream at Trader Joe’s today!

It’s not completely paleo, as it obviously contains added sugar and some hard-to-pronounce ingredients, but it doesn’t contain dairy or gluten. Once we finish these cartons (only a pint each, like Ben & Jerry’s), I won’t be buying it again except for special occasions. I just had a little spoonful each of chocolate and strawberry, which was plenty.

A note on dairy: I have pretty severe seasonal allergies and (TMI?) feel mucous-y more often than not. I’ve noticed in the past year or so that eating dairy really exacerbates that feeling. Even though I love cheese to death, I definitely feel much better overall now that I’m not eating dairy!

I didn’t post a photo of lunch because I didn’t really sit down to a meal; Aaron and I kind of grazed while watching The Green Mile (so good). I had a Larabar, some raw baby carrots and a smoothie made of frozen strawberries, papaya and mango with almond milk. We also munched on raisins, almonds and cashews while sunbathing at Green Lake.

It was a fruit-heavy day (i.e. lots of sugar), so I’ll make sure to pack in more veggies tomorrow. I have another appointment with my chiropractor, and then a much-anticipated (by me) first session of physical therapy on Tuesday. Let’s get this ankle back in business!

Aaron and I recently discussed our lack of cravings. Things I used to love – like buttered toast, grilled-cheese sandwiches, mac and cheese, ice cream, etc. (trust me, I could go on) – don’t appeal so much anymore.

We passed a Dairy Queen yesterday and I thought about my favorite cookie-dough blizzard, which is effing delicious, but I didn’t want it. I know it would probably hurt my stomach, since it’s more used to eating real food at this point.

Anyway, I just think it’s amazing how the body works. It really craves what you eat. Eat junk, crave junk. Eat veggies, crave veggies. And so on.

All this to say that I had an apple with a drizzle of honey as a snack and found it more than satisfactory. It left me feeling way better than a Dairy Queen blizzard would have, too.

Breakfast and Chelan

Breakfast was boooorrrring — same as dinner last night! Added some lemon tea.

I can be a repetitive eater; I stick to what I like. I’m OK with it as long as the food is nutritious and filling!

Breakfast for dinner!

We’re back in Seattle and filling up on protein and veggies: eggs, chicken-apple sausage and a shit-ton of broccoli.

I believe Kanye West once tweeted that “shit-ton” is an actual unit of measurement, and I agree. Kanye can tweet no wrong.

Aaron and I are gonna spend tonight relaxing and watching a movie. I can tell his oxycodone has kicked in because he’s singing Gotye in falsetto.

Had me a massive salad in Wenatchee on our way back to Seattle. (There was no point in staying in Chelan the rest of the weekend with Aaron in pain.)

Smoked salmon, pumpkin seeds, avocado, cucumber, tomato, cabbage, hard-boiled egg, kalamata olives and bean sprouts (which I picked off). Drizzled it all with olive oil and destroyed it.

Aaron had three burger patties with bacon and a side salad. He still has his appetite!
