Dinner: Warm kale salad with sauteed onion, a whole zucchini and… yes… bacon.

Earlier today I had my first encounter with uncured applewood-smoked bacon from Trader Joe’s and I couldn’t not have some more. It’s that good.

Kale is great because, like spinach, you can throw a ton of it into a pan and sauté it until it shrinks down to practically nothing. Bonus yumminess if you sauté it in a bit of bacon grease. : )
