A quick breakfast before we head to the 30-mi mountain bike race: Apple, bacon, Larabar. We have a microwave to make bacon, woo-hoo!
I should note for non-Seattleites that Chelan is about three hours away from Seattle, so we’re motelin’ it.
It rained all yesterday, so Aaron’s gonna get muddy! Should make for a good pic. : )

Aaron and I had a tough time tonight choosing a restaurant for dinner in Chelan. Italian restaurants and pizza joints abound, but paleo choices there are probably limited. We went to a Mexican place instead and each got steak fajita salads, leaving behind the crispy shells that the salads were served in.
We also asked the waiter to not bring any chips to the table, and by the look on his face, we might as well have asked him to set our table on fire.
Mexican food bonus: Aaron doesn’t like guacamole, so I got to eat it allllllll!
30-mile mountain bike race in the morning. I’ll be in charge of the cowbell.

Sorry… I had to get a cheesy paleo/Geico commercial joke in eventually.
My lunch just shows how simple it is to eat a delicious, satisfying paleo meal.
1. Choose a protein: I went with my last leftover tilapia filet.
2. Add veggies: I enjoyed a huge salad of mixed greens with cucumber, grated carrot and sweet peppers.
3. Round it off with some healthy fat: I had a small handful of raw almonds, and the olive oil/balsamic dressing on my salad counts as well.
I think this method of eating is a hell of a lot simpler than counting calories, and the combinations you can make for breakfast, lunch and dinner are endless! Choose your own adventure.

I would totally give you the recipe for the chicken, but it’s actually one of those already-cooked rotisserie chickens that hungry people barge into the grocery store and grab for dinner because OMG FEED ME NOW. Kindly direct your recipe inquiries to Safeway.

And there are more. Of course, a bunch of the stories are about people dropping weight and reversing diseases like type-2 diabetes, but there are also stories about people who have overcome eating disorders and developed a healthier relationship with food through the primal/paelo eating lifestyle. Also, there are abs. Lots of abs.

This is nearly the same paleo pancake recipe that badass mom/aspiring Ironman trimamatri sent me (thank you!!) after my pancake fail. Those ‘cakes look mighty yummy — looking forward to trying them!

He eats a tad faster than I do! As in… it takes him approximately 30 seconds to destroy his food.
Roasted chicken / mixed greens with sweet peppers and dried cranberries. My faaavorite beer on the side: Kona Wailua Wheat. Love it. Worth it!

My lunch was laaaate and overly ambitious. Once I ate the leftover “breaded” chicken, I knew I wouldn’t have room for the tilapia, so I threw it back.
Into the fridge, obviously… as opposed to the ocean.
I’m trying to finish off all my leftovers since Aaron and I are heading out of town tomorrow — he’s doing another 30-mile mountain bike race on Saturday!
The leftovers linger, though. They haunt me.
Right now I’m actually eating that tilapia and finishing the very last of the mashed sweet potato for a sort-of snack/pre-dinner. How did I stretch ONE sweet potato over three meals? I’m so ready for it to be over.
It’ll be interesting to see how I can eat paleo while in Chelan this weekend without my own groceries and or access to a kitchen. Stay tuned!
So far, I’ve been lucky with my paleo cooking adventures — everything has turned out well and been pretty tasty.
That changed this morning.

My first attempt was to make these three-ingredient paleo pancakes from Mark’s Daily Apple.
Wow! I thought. I can make pancakes with just banana, egg and almond butter? This is gonna be great!
Meh. It was not great.

No matter how long I cooked (and burned) them, the pancakes just didn’t seem “done.” They didn’t taste horrible, but they were a gross texture. I tried adding almond meal to the batter to see if that would help the issue, but I just couldn’t choke down the result. Next time, I’ll have to try an almond/coconut flour-based recipe to get something closer to regular pancakes.
Moving on… I’ve wanted to try these delicious-looking eggs baked in hollowed-out tomatoes from Everyday Paleo, so I went for it.


The directions said to bake them at 425 degrees for 25 minutes. Hmm.

After 35 minutes — 10 minutes longer than the directions called for — the egg whites were still liquid under the surface and the yolks were cooked through, which was exactly the opposite of what was supposed to happen!
When in doubt, just scramble that shiz up.

The end result: An egg-and-tomato scramble with sea salt, pepper and chives straight from my mom’s garden. One chicken-apple sausage on the side.
It wasn’t what I was planning or expecting, but it filled my tummy… like two hours after I started making breakfast.
Ha! Live and learn.
