I have a bunch of plain spaghetti squash left over from when I made spaghetti squash casserole with ricotta and spinach this weekend (my review of it here), and tonight was my first attempt at using it up.

I sauteed a minced clove of garlic in olive oil, then threw in some spaghetti squash and baby spinach and cooked it until the spinach wilted. Along with sauteed asparagus (my obsession), this was an absolutely delicious dinner.

I’m not even really hungry due to being sick, but this hit the spot AND was good for me!

Back from the dead!

Oh, Tumblr, I’ve left you hanging for a while.

I’ve been doing all sorts of fun stuff besides running, like batting (horribly)…

…cooking (this became a casserole)…

drinking

…and, holy cow, eating delicious cupcakes.

And now I’m sick, so I can’t even fathom running/working out. It’s frustrating because I hate not feeling like myself and not being able to keep up my fitness level. I felt like I did pretty good with my 5K training, and now I’ll have to start from scratch for the 10K I want to run in April.

Ah, well. We fall. We pick ourselves back up again.

And we run.
